This is a quick, easy, and delicious meal to serve to your littles. Adding spinach to the eggs packs a nutritional punch, and the cheesy eggs are savory and will be gobbled right up.
1 tablespoon flour
2 to 3 tablespoons shredded cheese
2 to 3 tablespoons chopped spinach
2 eggs
pinch of Gefen Salt
small splash of milk or water
oil spray (I used avocado; Gefen Coconut Oil Spray would also work)
Whisk all ingredients well.
Spray avocado oil in your pan and heat over a medium flame for a minute. Pour in egg mixture and cover. Let cook for three minutes, then uncover and flip. Let cook for an additional minute or two.
Serve with toast or even alone, it’s a full meal in one pan!
