1 small butternut squash peeled and cubed
2 medium carrots cubed
4shalots peeled and cubed
15-20 baby potatoes halved
1 chicken cut in quarters or eights
sauce
1/4 cup olive oil
1/4 cup maple syrup
1/4 cup Dijon mustard
2 Tbsp balsamic vinegar
1 TSP garlic powder
1 TSP salt
1 TSP soy sauce
Place all sauce ingredients into a small bowl and mix to combine. Place vegetables and potatoes in the bottom of the crock pot. Add about 1/4 of the sauce and stir to combine. Arrange chicken pieces over the vegetables. Pour remaining sauce over the chicken. Cook on high for 4 hours or at low for 6-8 hours. untill Very tender
